Nine Minutes on the Marble Slab: Our Six-Stage Craft

How we transform glowing copper-kettle pours into cosmic swirls, stained-glass lattices, and faceted geometric confections—entirely by hand in our Minneapolis studio.

Traditional Tools, Architectural Precision

Why Speed Is the Enemy of Character

In a modern commercial factory, confectionery never touches a stone table or a human hand; it is pumped through closed pipes into spinning steel dies at thousands of pieces per minute. The result is uniform, inexpensive, and lifeless.

At Copperfinch Confections, our primary instruments haven't changed much since 1890: two heavy hammered copper kettles, a four-inch-thick slab of honed Italian marble, solid brass framing bars, a forged iron pulling hook anchored into our brick wall, and a pair of weighted confectioner’s shears.

Once the kettle leaves the flame, a nine-minute thermal clock begins. Every fold, swirl, and facet must be executed while the batch passes through a narrow window of plasticity before setting into solid, resonant glass.

Step by Step

The Six Stages of a Copperfinch Batch

Every batch of forty to sixty pieces travels through these six stages in our West 28th Street workshop.

STAGE 01 · THERMAL KETTLE WORK

Open-Flame Copper Kettle Heating

Copper conducts heat nearly twenty times faster than stainless steel, eliminating hot spots and allowing us to bring each batch to the exact hard-crack thermal threshold with split-second control. We often run two smaller kettles simultaneously when a piece calls for contrasting outer and inner flavor stages.

STAGE 02 · THE MARBLE POUR

Pouring Inside Heavy Brass Framing Bars

The glowing liquid is poured onto our honed marble table inside movable square or hexagonal brass bars. As the cool stone draws heat from the underside, we use flat steel palettes to fold the edges inward so the entire mass cools at an even rate without premature crystallization.

STAGE 03 · CHROMATIC & AROMATIC LAYERING

Building the Three-Act Flavor Structure

This is where our “Can you guess the flavor at first bite?” magic happens. Rather than blending everything into one uniform pool, we keep distinct aromatic sections separate on the stone. Our proprietary formulations remain unprinted studio secrets, designed to shift as each layer dissolves on the palate.

STAGE 04 · THE WALL HOOK

Eighty-Fold Satin Pulling & Aeration

For pieces like our Midnight Nebula Ribbons or the lattice threads inside our Vesper Amber Flats, a portion of the warm batch is thrown over our wall-mounted iron hook and pulled eighty times by hand. This traps thousands of microscopic air channels, turning clear amber into shimmering, opaque satin that snaps delicately on the tooth.

STAGE 05 · SCULPTING & SHEARING

Cosmic Swirls, Brass Collars & Facet Cuts

Before the batch drops below its working temperature, we either coil cosmic nebula ribbons around unfinished Maine birch dowels, cast bi-layer hexagons in custom brass collars, or hand-shear warm ribbons at forty-five-degree angles to create jewel-cut polyhedral prism drops.

STAGE 06 · THE BLIND WRAP

Humidity Curing & Numbered Wax Sleeves

Freshly cooled pieces are immediately sealed in moisture-barrier sleeves in our climate-controlled curing room. Each wrapper receives a batch number rather than a flavor name, accompanied by our wax-sealed reveal envelope for your tasting table.

Optical & Textural Craft

How One Kettle Produces Two Opposite Textures

By dividing a single kettle pour between the flat marble slab and the wall hook, we combine glass-clear density with crisp aerated satin inside the same lollipop.

Path A: Unpulled Marble-Cooled Glass • Zero trapped air pockets • High optical translucency • Slow, glass-smooth dissolve Path B: 80-Fold Wall-Hook Satin • Microscopic air channels • Pearlescent silk sheen • Crisp snap & rapid aroma release
